Is Kosher Beef Jerky Meat or Pareve?
Kosher beef jerky is meat (fleishig), always. It is never pareve. That matters more than people expect with a snack, because jerky gets eaten in places where the meat and dairy question is easy to forget: a bag in the car after a pizza lunch, a gift basket full of chocolate, a kiddush table next to the cheese. Here is how to handle it.
Why it is always meat
Beef is meat under kashrut, however it is prepared. Drying, curing or glazing it does not change that. The same goes for biltong, meat sticks and any other dried beef. Some kosher agencies mark products with the word "meat" or a letter "M" next to their symbol; on jerky, if that marking is not there, the product is still meat.
Where the meat and dairy rule bites with jerky

Pareve pairings that work
If you are building a basket or a table around jerky, these are pareve and pair well: wine and grape juice, pareve chocolate, nuts, dried fruit, crackers, pickles and olives, pretzels and chips, pareve cookies. They are also the things that contrast well with salty, savory or sweet-glazed beef.
A note on "pareve jerky"
Plant-based "jerky" made from mushrooms, soy or seitan can be pareve, if certified as such. It is a different product. Anything made from beef is meat.
