Start with Original, 3 oz. It is the blend with nowhere to hide, and every other flavor makes more sense once you have tasted it. The most common first-order mistake is buying a pound of a flavor you have not tried.

Per ounce, the 1 lb formats run about a quarter below the 3 oz bags and the 1 oz Mini’s are the most expensive way to buy it. That is a portioning premium and it is worth paying when portioning is the point — travel, lunchboxes, a first taste — and not otherwise.

It ships better than almost any other meat

No cold chain, no insulation, no rush. Every bag is sealed with an oxygen absorber, which is what makes three to six months in a cupboard an honest number. Heat affects texture rather than safety — what governs that is how little water is left available in the meat, and a sealed bag’s does not change with the weather.
