Why the sugar matters
Jerky is marinated and cooked, and the marinade is where the sugar comes from. Biltong is washed in vinegar, salted and air-dried for days — no marinade, so no sugar, and near-zero carbohydrate in the Original blend. That is the whole reason it turns up on keto and carnivore shopping lists while most dried meat does not.
Two things worth saying plainly
It is salty. Salt is a preservation mechanism here rather than a seasoning choice, so anyone counting sodium should count it. And it is easy to eat a lot of, because a bag does not feel like the amount of beef it actually is. Neither is a reason to avoid it; both are reasons to know what you are eating. No nuts, dairy, soy, eggs or fish, and no refrigeration — which is usually the binding constraint for a gym bag or a lunchbox rather than the macros.
