What it actually tastes like

Beef first, then the warm citrus note of coriander, then salt. There is no smoke and no sweetness — which is the first surprise if jerky is your reference point.

The second surprise is the texture. Biltong gives way rather than fighting back. It is cut thick and with the grain, so it comes apart in long fibers instead of resisting like a thin cross-cut strip. People either take to that immediately or never quite do, and a 1 oz Mini settles the question for under five dollars.

The mistake almost every first order makes

Buying a pound of a flavor you have not tasted. Per ounce the pound is much better value, which is exactly why people reach for it — and a pound of a heat level you dislike is a long month. Start small, then go big on the one you want.

Reading the first bag

  • Eat three pieces before deciding. Edge pieces are drier and middle pieces softer; the first one is not a fair sample.
  • A fine white bloom on a slab is salt, not mold. It is harmless.
  • Reseal it. Sealed it keeps for months; open in a humid kitchen it has days.
  • Leave the little sachet in. That oxygen absorber is the shelf life.

Is it raw?

No, and not cooked either — it is cured. Vinegar drops the surface pH, salt draws the water out, and days of moving air take it below the point where bacteria can grow. Same principle as prosciutto. The long answer.
