How Long Does Kosher Biltong Last? Shelf Life Explained

Unopened kosher biltong lasts 4-6 months at room temperature in a cool, dry spot. Once you open the bag, you're working with a 2-3 week window at room temperature in an airtight container, or up to 4 weeks if you move it to the fridge. Those are real numbers based on how biltong is produced, not a conservative guess padded for liability.

The reason biltong lasts this long comes down to two things: moisture removal and salt. During production, biltong loses 50-60% of its original moisture content. Less moisture means less water for bacteria and mold to work with. On top of that, the salt content sits at around 2-4% by weight, which pulls water activity down further and creates an environment where most spoilage organisms simply cannot get a foothold. That is genuinely different from how fresh beef works. A package of fresh ground beef lasts 3-4 days in the refrigerator. Properly dried biltong at room temperature lasts 16-24 times longer. No refrigeration required while the bag is sealed.

One thing worth being direct about: kosher certification does not add a single day to the shelf life. Leave it in a warm kitchen or a humid pantry and you accelerate both mold growth and fat rancidity. The bag matters too. An open bag sitting loosely folded on the counter will degrade noticeably faster than the same biltong sealed in an airtight container.

One practical note: slabs and sliced biltong behave a little differently once opened. A whole slab has less exposed surface area, so it holds up slightly longer after opening than pre-sliced pieces do.
