How to Serve and Store Biltong

Biltong is ready to eat the moment you open the bag — no cooking, no prep, nothing to set up. But how you slice it, and how you store what you don't finish, makes a real difference to how it tastes on day three. Here's the whole thing, bag to bite.

Step 1: Store what you don't finish
This is the one step people miss. Once the bag is open, biltong needs to go into an airtight container or a resealable bag. Keep it at room temperature below 25°C if you'll finish it within a few days, or refrigerate it at 2 to 8°C if you want it to last longer. The goal is to keep moisture out, not in. Biltong that sits in a loosely closed bag can either dry out completely or, in humid conditions, start to get tacky and soften in ways that affect the texture and flavor.

That's the real difference between biltong staying great for a week versus turning on you after two days. Trust your senses on this one: if it smells off or feels wet and sticky rather than firm, don't eat it.
