How to Troubleshoot Biltong: Mold, Texture, and Spoilage Fixes

Most biltong problems trace back to one of three things: too much humidity during the dry, not enough cure time before hanging, or drying the meat too long. Each issue shows up differently, and once you know what you're looking at, the fix is usually straightforward. The goal is to hit a final moisture content between 35% and 45% by weight, within an ambient humidity of 40–60% relative humidity and a temperature range of 55–75°F. Drift outside those windows and you'll hit one of the problems below.

Mold appearing during the dry

This is the most common issue, and it usually means your environment is too humid. Mold on biltong tends to show up when relative humidity climbs above 70%. If you see white or green fuzz forming on the strips, stop the dry immediately. Trim away the affected areas with a clean knife, then move the strips somewhere with better airflow, or add a small fan to your drying box to keep air moving across the surface. If your space is generally humid, a small dehumidifier running nearby makes a real difference. Don't just wipe the mold off and continue drying in the same conditions. The mold came back because the environment invited it.

Signs of spoilage: off-odor, slime, or discoloration

Trust your senses here. If the biltong smells sour or ammonia-like, feels slimy on the surface, or shows unusual grey or green discoloration, that batch is not salvageable. Discard it. This almost always means the cure didn't penetrate the meat properly before hanging. A proper biltong cure uses 5–8% salt by weight of the meat and needs a minimum of 24 hours in the marinade before the strips go up to dry. Cutting that time short, or using strips thicker than 2 inches without adjusting cure time, leaves the interior vulnerable. Future batches: stick to the full cure window, and if you're working with thicker cuts, give the vinegar and salt more time to do their job.

What's different from jerky troubleshooting

It's worth remembering that biltong is not jerky. Jerky uses heat at 160–175°F to dry the meat. Biltong relies entirely on air at ambient temperature after the vinegar cure. That means you can't speed things up with heat to correct a problem mid-dry without fundamentally changing what you're making. The dense, less brittle texture that makes biltong what it is comes from that slow air dry, so the fixes have to work within that process.
