How to Store Kosher Jerky and Biltong
Sealed, kosher jerky and biltong keep three to six months in a cool, dry cupboard. Once opened, reseal and finish within a few days, or refrigerate. That is the whole rule. The details depend on whether it is sweet jerky or savory biltong, and where you are keeping it. Here they are.

The sealed bag holds an oxygen absorber. That, plus the seal, is the preservation system. Do not move unopened jerky into jars.
Sweet jerky versus biltong

Signs it has gone off
- Mold: fuzzy white, green or blue spots. Throw it out. (Some biltong has fine white salt or fat bloom on the surface, which is not mold; mold is fuzzy.)
- A rancid smell, like old oil or paint. Fat oxidation.
- A slimy or wet surface.
- When in doubt, throw it out.
Kosher storage points
- Meat, not pareve. In a shared fridge, keep it in the meat section or a sealed container marked meat.
- Before Pesach, jerky without a Passover certification may contain chametz. Ask your rabbi how to handle it with the rest of your chametz. More on Pesach.
- At a kiddush or simcha, put out what will be eaten and keep the rest sealed.
Buying for storage
- 1 oz minis are the easiest to store: each one opens fresh.
- Bulk bags: split into week-size sealed bags on the day they arrive.
- Check where a shop bag has been sitting. A bag above a warm deli case is not the same as one from a cool shelf.
