Super Bowl Snacks: A Kosher Meat Spread You Can Set Out Early

The best Super Bowl snacks are the ones you can set out two hours before kickoff and not touch again, and for a kosher meat spread that means ready-to-eat beef, a few cold bites and one or two pans you finish ahead of time. We are a kosher meat-snack maker, so we have a bias: our biltong and jerky are certified Glatt Kosher, and here is what that means for how we work. But the plan below works for any host, kosher or not. It covers what a game-day table has to do, how to build it around meat without cheese or cream, four recipes with real quantities, how much to buy, and when our food is the wrong choice.

What Super Bowl food actually has to do

A Super Bowl party is a long afternoon. Guests arrive over an hour, eat for four, and leave at different times. The food has to survive that.

Judge every dish by four tests:

  • It holds at room temperature. If it needs to be piping hot to be good, you will be in the kitchen during the second quarter.
  • It can be eaten with one hand. The other hand has a drink or a remote.
  • It does not need a plate and fork. Plates get abandoned on the couch arm. Finger food gets eaten.
  • It is done before kickoff. Your job during the game is to watch the game.

Most of the classic spread fails at least one of these. Wings go cold and greasy. Dips skin over. Nachos turn to cardboard in twenty minutes. Dried beef, pickles, nuts and fruit pass all four, which is why a snack table built around them is the easiest one to host.

The kosher twist: keep the table all meat

The standard Super Bowl menu leans hard on dairy: queso, ranch, blue cheese dressing, buffalo dip, nachos with cheese. If you are serving a meat meal, none of those belong on the same table. Meat and dairy are kept separate in a kosher kitchen, and families follow their own custom on how long to wait between one and the other.

So make the whole spread meat or pareve. Pareve means neither meat nor dairy, and it covers fruit, nuts, vegetables, eggs, pickles, hummus and most chips. Check packaged items for dairy ingredients and for a kosher certification. If your plan involves a dairy round at some point in the evening, ask your rabbi how your family should handle the timing.

It is also an easier party for everyone else. Guests who do not keep kosher never have to ask what is in anything, and guests who do never have to worry.

Build the table around beef

Two kinds of beef cover almost every taste at one table, and both come ready to eat.

Around the beef, add things that cut the salt:

  • Something sour: dill pickles, pickled peppers, olives.
  • Something sweet: grapes, apple slices, dried apricots.
  • Something crunchy: roasted nuts, pretzels, plain chips. Check labels for dairy, since seasoned chips often contain it.
  • Something fresh: celery, cucumber, mini peppers, with hummus.

Four recipes you finish before kickoff

Biltong is already cured and ready to eat, so none of these cook it. Everything except the beef is pareve. Check the labels on your own mayonnaise, mustard, sauces and packaged ingredients for a kosher certification.

1. Beef-and-pickle skewers (makes 24)

  • 24 small cocktail pickles or cornichons
  • 24 slices of Original Sliced Biltong
  • 24 pitted green olives
  • 24 toothpicks or short skewers

Fold a slice of biltong around a pickle, then thread it onto a toothpick with an olive. If a slice is too short to wrap, use two small ones. This takes ten minutes and needs no heat. Make it the morning of and cover it with plastic wrap on a platter.

2. Oven wings with a dry rub (serves 8 as a snack)

  • 3 pounds chicken wings, split, with kosher certification
  • 1 tablespoon baking powder (aluminum-free)
  • 2 teaspoons salt
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Pat the wings very dry. Toss with the baking powder, salt and spices. Spread them on a rack set over a sheet pan, skin side up, and refrigerate uncovered for at least 1 hour. Heat the oven to 425°F and roast 45 to 50 minutes, turning once halfway, until deeply browned and crisp. Serve them plain or with a squeeze of lemon. A dry rub holds better than a wet sauce, which makes wings soggy on a buffet. They are best warm but still good at room temperature, so bake them just before the first guests arrive and leave them out for an hour.

3. Chili-garlic stuffed mini peppers (makes 24 halves)

  • 12 mini sweet peppers, halved lengthwise and seeded
  • 1 cup hummus
  • 4 to 5 slices of Loaded Garlic Sliced Biltong, chopped fine
  • 1 teaspoon smoked paprika, for dusting

Spoon about a teaspoon of hummus into each pepper half. Top with a pinch of chopped biltong and a dusting of paprika. Make the peppers the night before and keep them chilled, then add the biltong just before serving so it stays chewy rather than going soft. Do not leave them out for more than two hours.

4. Sweet-and-salty snack mix (makes about 8 cups)

  • 3 cups plain pretzel sticks (check the label for dairy)
  • 2 cups roasted almonds or peanuts
  • 1 cup dried cranberries
  • 1 cup Hickory Kickory Dock Meat Candy, cut into thin strips with scissors
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt

Heat the oven to 300°F. Toss the pretzels and nuts with the oil, paprika and salt. Spread on a sheet pan and bake 15 minutes, stirring once. Cool completely. Stir in the cranberries and the Meat Candy strips. It keeps in an airtight container for a few days, so you can make it Friday for Sunday. Skip the nuts and double the pretzels if anyone at the party has a nut allergy, and tell people what is in the bowl.

How much to buy

A game runs about three and a half hours, and people graze through all of it. Plan on the heavy side. A good starting point is roughly one ounce of cured beef per person if beef is one of several snacks, and closer to two ounces if it is the main event. A timeline that gets you to kickoff calm

  • Five days before: order the biltong and Meat Candy. Buy nuts, pretzels, pickles and canned goods.
  • Two days before: make the snack mix. Check labels on everything for dairy.
  • The night before: fill the mini peppers (without the biltong). Season the wings and put them on the rack in the fridge.
  • The morning of: assemble the skewers. Slice fruit and vegetables. Put out bowls and napkins.
  • Two hours before kickoff: roast the wings. Top the peppers with biltong.
  • One hour before kickoff: set everything out. Open the biltong bags last.

After that, the only thing left to do is refill the bowls at halftime.

When this spread is the wrong one

We would rather tell you now than have you find out in the second quarter.

  • If you want a hot, messy, plated menu. Biltong is a cold, chewy snack. It will not replace chili, sliders or nachos if those are the tradition in your house.
  • If your crowd is mostly vegetarian. A beef table is for beef eaters. Make the pretzels, nuts, hummus and vegetables the main event, and treat the beef as an extra.
  • If your party is dairy. Beef is meat. If you are serving cheese and cream dishes, keep the beef off that table and ask your rabbi how to handle the timing between meals.
  • If you will not have time to sort flavors. Peri Peri has real heat. If you cannot tell your guests, put out Original and Loaded Garlic and keep the heat to a small bowl.
