Does "Kosher-Style" Jerky Mean Anything?
No. "Kosher-style" jerky means nothing about how the jerky was made. It is not a certification, no agency stands behind it, and nobody checks it. It describes a kind of food, the way "kosher-style deli" describes pastrami and pickles, not whether the food is kosher. If you keep kosher, treat "kosher-style" as "not kosher."
Where the phrase came from
"Kosher-style" grew up in American Jewish delis in the twentieth century: restaurants serving the foods of Jewish Eastern Europe (corned beef, pastrami, knishes, matzah ball soup) without following kosher law. Some served meat and cheese together. The phrase told customers what the food would taste like, not how it was produced.
Why it is a problem on jerky
- It sounds like certification. A shopper skimming a bag can easily read "kosher-style" as "kosher."
- Jerky is exactly where kosher is hardest. The beef, the cut, the marinade and the facility all have to be right. "Kosher-style" guarantees none of them.
- The ingredients may be the opposite of kosher. Nothing stops a "kosher-style" jerky from using non-kosher beef or a Worcestershire marinade.
