Kosher Jerky vs Kosher Beef Sticks
Kosher jerky is sliced whole muscle; kosher beef sticks are usually ground meat stuffed into a casing, like a dry salami. Both can be certified kosher, but beef sticks bring one extra kashrut question, the casing, and a different texture and ingredient list. Here is how they compare.

The casing question
Traditional sausage casings are made from animal intestines. For a kosher beef stick, the casing must itself be kosher: from a kosher animal, properly prepared, or made from collagen or cellulose under certification. It is one more component the agency has to supervise. On a certified product, that is covered by the hechsher; on an uncertified one, it is one more reason it could not be kosher.
Whole muscle versus ground
- Whole muscle is what you see: a slice of beef. Our Meat Candy is real, whole sliced beef, and our biltong is whole muscle cut with the grain.
- Ground meat can be excellent, but it hides what went in. In cheaper products it is where scraps and mechanically separated meat turn up.
