Kosher Beef Jerky vs Kosher Biltong
Kosher beef jerky is marinated and cooked in hours; kosher biltong is cured in vinegar and salt and air-dried over days, never heated. Both are certified dried beef, but they taste, chew and certify differently. If you are choosing between them, here is the whole comparison.

Why biltong suits kosher production
- Fewer ingredients. Our Original is beef, coriander, black pepper, salt, garlic and vinegar. Fewer things to certify.
- No sauces. The Worcestershire and soy sauce that usually sink jerky are not there. More on that.
- Never cooked. The bishul akum question does not arise the same way. More on that.

Storage
Both keep three to six months sealed with an oxygen absorber. Once opened, reseal and finish within a few days. Glazed jerky gets sticky in humid air; biltong keeps drying and gets firmer.
