Desert heat and dried beef
Dry air is good for dried meat; heat is not.
- Never leave bags in a parked car. An Arizona car interior in summer is far hotter than any shelf-stable food is meant for.
- Opened biltong keeps drying in low humidity and gets firmer. Reseal it if you like it softer.
