Biltong for a Small Gathering vs a Big Party: What Changes
At a small gathering, put out a slab and carve it at the table. At a big party, put out sliced biltong in small bowls and keep refilling. The amount per person barely changes with the size of the crowd. What changes is format, timing and how you serve it. Here is the difference.
The amount stays the same
Plan per person, whatever the crowd:
- About 2 oz a head when biltong is one thing among several on the table.
- About 4 oz a head when biltong is the main thing people are snacking on.
A pound (16 oz) covers about eight people alongside other food, or about four as the main snack.

The small gathering
With a few people around a table, a slab is the better experience. It looks like food rather than a snack, you can cut thin or thick to suit each guest, and it becomes a talking point. It also keeps better across a long evening: a slab does not dry at the edges the way slices in a bowl do, because you only cut what is about to be eaten.
What you need: a heavy, sharp knife and a wooden board. Cut across a thick end into thin slices to start; people who like it chunky will ask. One pound slab is plenty for up to eight people with other food.
Choose the flavor for the room. Original if you do not know everyone's taste, Peri Peri if the table likes heat, Loaded Garlic for a savory crowd that does not.
The big party
At twenty people or more, nobody is going to stand at a board carving. Sliced biltong is the right call, and the trick is to serve it in stages.
- Several small bowls, not one big platter. People snack from whatever is in reach.
- Open bags as bowls empty. A sealed bag keeps for months; an opened one starts to soften in humid air within hours.
- Label the flavors. Peri Peri has real heat, and at a big party someone always takes a handful without knowing.
- Hold a bag back. Biltong goes early. Keep some for later in the evening.
For a mixed crowd: about half Original, a quarter each Peri Peri and Loaded Garlic. If you want a sweet option on the table too, add Meat Candy.
