Made in Ormond Beach

The Grub Company dries its biltong at 131B Business Center Drive, Ormond Beach, Florida — between Daytona Beach and Palm Coast, on the state's Atlantic side. Everything is made here in small batches, not imported and rebagged.

That matters more for biltong than for most foods. Biltong is at its best within weeks of drying, and a product that has crossed an ocean and sat in a distribution chain is not fresh in the way the maker intended. Ours is dried, sealed and shipped from one place.

If you are not near one of those

Most of Florida is not, and it is not much of a problem. Biltong is one of the better foods to buy online: it is shelf-stable, it needs no cold chain, and a sealed bag arriving after two days in transit is in exactly the condition it left in. Free shipping on orders over $50.

Asking a Florida grocer to carry it

This works more often than people expect, and it is how most of our stockist list came about. Give the manager three things: the maker's name, that it is certified Glatt Kosher, and that you will buy it regularly. Shops stock on expected turn, and one committed customer who names the product is more useful than a vague suggestion.

If they are interested, point them at us rather than trying to broker it yourself — we handle that conversation routinely.

Why Florida has real kosher biltong demand

Two things overlap here that do not overlap in most states.

South Florida has one of the largest Jewish populations in the country, concentrated in Aventura, Hollywood, Boca Raton and Miami Beach, which is why the kosher grocery infrastructure exists at all. Florida also has a substantial South African expat community — people who grew up on biltong and have spent years explaining it to Americans.

Where those two overlap, biltong stops being a novelty and becomes a staple. That is the honest reason a small Florida town can have better kosher biltong access than a large city elsewhere.

A note on searching for it

Searching the product name plus your city often returns national online sellers rather than local shops, because few local grocers list individual products on their websites. Searching the shop type works better — "kosher market near me" or "kosher grocery" plus your area — and then a phone call settles it in thirty seconds.

What to check when you buy it locally

Buying in a shop gives you one advantage over ordering: you can inspect it. Worth using.

  • Color. Deep red-brown, darker at the edges. Uniform pale brown suggests heat drying rather than air drying. Gray is a bad sign.
  • The seal. Intact, with an oxygen-absorber sachet inside. That sachet is what makes a months-long shelf life credible; a plain zip bag on a warm shelf is a gamble.
  • The date. A pack date beats a best-before date if both are shown. Biltong is at its best within weeks of drying.
  • Where it sits. A shelf above a warm case or in direct sun is a worse shelf than a cool one, and in Florida that matters more than in most places.
  • The hechsher on the bag, not the word "kosher" printed by the brand.

Florida heat, and what it does to dried meat

Worth saying plainly, because it changes the advice here more than anywhere else we ship.

Biltong is hygroscopic: it pulls moisture out of humid air. Sealed, that does not matter — the bag and its oxygen absorber hold it at three to six months. Once you open it, Florida changes the numbers. In an air-conditioned house, an opened bag is comfortable for three or four days. In a humid room in August, treat it as one or two, and refrigerate anything you are not finishing.

The other local hazard is a car. A sealed bag left in a Florida car in summer is fine for an hour and not fine for an afternoon — heat moves moisture around inside the bag and the texture suffers. Take it inside.

If you are ordering for a simcha, a kiddush or a Yom Tov, order the week before rather than the week of. Not because the product is fragile — it is not — but because carriers do not plan around the Jewish calendar, and a Thursday shipment that slips becomes a Monday delivery.
