Biltong is not jerky. It is whole-muscle beef, cured in vinegar and salt, spiced with coriander and air-dried without heat — which is why it stays tender instead of turning to leather. Everything here is kosher, made in small batches, and shipped across the USA. Slab if you like tearing, sliced if you like sharing, minis if you keep losing the bag.
