The most common first-order mistake is buying a pound of one flavor before knowing whether you like that flavor. Start small, then go big on the one you want.

What you are actually buying

Biltong is not jerky. Jerky is sliced thin, soaked in a sugar marinade and cooked in a few hours. Ours is cut with the grain, washed in vinegar, salted, coated in cracked coriander and black pepper, and hung in moving air for days. Nothing is ever heated.

Certified Glatt Kosher

Ours is certified Glatt Kosher, and the certificates are published rather than claimed — see the Kashrus certificates. That matters because most biltong sold in the US carries no certification at all, and "kosher-style" means nothing.

The reason so little biltong is certified: biltong is traditionally made from hindquarter cuts, which require skilled porging that most commercial kosher butchers in the US do not do. One thing worth doing before you check out: a single 3 oz bag with paid shipping works out to $5.33 an ounce, which is worse value than the Mini's. Either clear the $50 threshold or keep the order small deliberately.

Biltong needs no refrigeration in transit. Every bag is sealed with an oxygen absorber, which is what gives an unopened bag three to six months in a cool, dry place. Once you open it, reseal and eat within two or three days, or refrigerate. Full storage guide →

Questions people ask before ordering

Is biltong raw? No, and not cooked either — it is cured. Vinegar drops the surface pH, salt draws out the water, and the drying takes it below the point where bacteria can grow. Same principle as prosciutto. The long answer →

How long does it last? Three to six months sealed. Two to three days once opened, or a week or two refrigerated.

Does it need refrigeration? Not while sealed. That is the whole point of the method.

Is it keto? Yes — near-zero carbohydrate and no added sugar in the Original blend.

Is it gluten free? There are no gluten ingredients in our blends. Check the bag for the specific product.

How much should I order? Roughly 2 oz per person if biltong is one of several things on the table, 4 oz if it is the thing people are eating.

Can I order in bulk or for a business? Yes. Bulk and wholesale options are here — and because we dry to order in batches, get in touch early if you need a specific quantity by a date.

What if I don't like it? Tell us. We would rather hear it than have you quietly not reorder.
